Chipotle Sweet Potato Shepherd’s Pie

Topping:
1 can chipotle chiles
2 ½ lb peeled sweet potatoes, cut 1 in pieces
1 cup milk
1 t salt
¼ t pepper

Filling:
2 lb ground beef
cooking spray
2 chopped onion
1 c chopped carrot
3 garlic cloves, minced
1 c frozen green peas, thawed
½ c crushed tomatoes
¼ c chopped parsley
3 T steak sauce, such as A.1.
2 T tomato paste
½ t cracked black pepper.

Heat oven 400.
Remove 1 chile and 2 t sauce from can, save remaining chiles and sauce for another use. Coarsely chop 1 chile.
Place potatoes in saucepan, cover with water, boil, cook 14 minutes or until tender. Drain, place potatoes, chile, adobo sauce, milk, salt, epper in bowl and beat until smooth.
Cook beef in skillet over med-high heat until browned and crumbled. Drain.
Heat pan over medium high heat, coat with cooking spray. Add veggies sauté until tender. Return beef to pan, cook 2 minutes. \
Spoon beef mixture into casserole, top with sweet potato mixture, spreading evenly. Bake for 30 minutes.

I am SO making this. Sounds wonderful! I love sweet potatoes, I love chipotle, and I love shepherd's pie, and never in a thousand years would I have thought of putting them together.

This is great especially during the cooler months. It just warms you right up!
