When you harvest them, srub them and blanche them to remove the skins, don't throw away the juice. I have a delicious red beet jelly recipe that was given to me this week by a friend. I just used it and we all like it! :)

Red Beet Jelly

6 c beet juice (strained)
1/2 c lemon juice
2 boxes Sure-Jell (I use low sugar, but either will work)
6 c sugar (the recipe calls for 8 cups but it was too sweet for me. You can use whichever you like)
1 pkg. (6 oz) Jello, raspberry or strawberry (I've used both and they're both delicious but I like raspberry just a bit more)

Combine first 3 ingredients and bring to a boil. Add sugar and Jello and boil 6-8 min. longer. Hot pack in glass jars or you can let cool a bit, pour into freezer containers, let cool to room temp., cover and freeze.
