I am having major chocolate cravings and there is no chocolate in the house, but I found some Jello instant chocolate pudding. Can I make it with rice milk or coconut milk? Does it have to be cow's milk?

I made chocolate milk with coconut milk this morning.....YUMMY. The pudding would be decadent.

Soy milk does not work so well. You have to use half the amount of milk (or double the pudding mix) and it still does not set well - ends up more like sauce instead of pudding.

We tried chocolate pudding with soy milk --it didn't set at ALL, ...but it did make wonderful popsicles! :lol
Dd still is asking me to make "pudding popsicles" with soymilk again :lol.

I've made it with raw goat milk and it was delicious.

Rice milk maybe? and could you add cornstarch or kuzu root starch to help thicken...? I never make instant pudding so I don't know if there is heat involved.

I make it with soy milk silken tofu and the instant pudding mix turns out great and adds protein. Also done the same with Chocolate rice dream (chocolate pudding) also great.

Well, all I had was rice milk and coconut milk, so I used half and half. Actually a little more coconut milk than rice milk. The texture came out great, but it had a strong coconut flavor that really competed with the chocolate. Oh well. I ate a bowlful so it must not have been too bad. :shifty Thanks for the help. :tu

If you want to make pudding out of soy milk, then it turns out best if you use the kind that you cook and use a really thick soymilk, like 8th Continent :tu
