ISO Eggplant Recipes

I have way too much eggplant and I am really getting tired of making eggplant parmesean.
The only other way I have been making it is with ground beef or turkey and peppers and tomatoes, served over rice.

How else is it good for dinner?

We love it cut into cubes with chopped zuchinni, mushrooms, red peppers, capers and whole garlic cloves...sauteed in olive oil and white wine and tossed with whole wheat angel hair pasta with lemon juice, garlic salt, and pepper :grin
