Today is Canadian Thanksgiving & I am in the midst of our dinner preparations.

A whole turkey is hard to come by here, so I bought a gigantic breast of white meat with no skin & two drumstickish pieces with skin (looks like drumsticks - sort of :rolleyes )

I can't quite decide how to cook it. I thought about doing it with a bit of broth in the bottom of a roaster, with a bit of onions & poultry seasoning, and then covering it with tinfoil.

Any other bright ideas for how to make my turkey pieces seem like a big normal Thanksgiving turkey?

Roasting it in the oven would probably be your best bet. Yum! :yum I'd cook it at 325F till internal temp was 170/180F. Since it has no skin, you're right to wrap it in foil - just tent it so it doesn't touch the meat. Slice it before you bring it all to the table, that way it still seems like a regular turkey dinner. :shifty

What about all the fixings? Stuffing, mashed potatoes, gravy!! cranberry sauce, squash, veggies....Hmmm....getting hungry.
