that uses honey as the sweetener. i don't know how to replace honey for sugar...going to look that up next, but if i could find a tried and true recipe, i would prefer that. thanks! :)

Haven't tried this but it's in my honey cookbook (called Honey book :giggle - authors are the farmers I get raw honey from :tu) We love the honey brownies so I will probably try this
1/4 C honey
1 egg beaten
1/4 C melted shortening
1/2 C blueberries
2 C flour
1 t salt
3 t baking powder
1 C milk
Stir together flour, salt milk. Mix milk, honey, egg, blueberries and melted shortening. Mix together. Stir long enough to moisten dry ingredients. Fill greased muffin tins 1/2 way. Bake at 400 for 35 minutes or until browned.

do you know how to replace shortening with oil? is it just cup for cup, or does it need adjusting?

If you use a solid oil (coconut or palm for example) I know you can do cup for cup -- I use palm for all our "shortening" needs. I would think you could do butter or earth balance too :think not sure about oils that are liquid at room temp
