Tomato Soup

1 tbsp butter
2 tbsp olive oil
1/2 med onion, finely diced
1 clove garlic, minced
1/2 tsp salt
1 1/2 cups chicken stock
5 roma tomatoes, roughly chopped
1 tsp Italian seasoning

Heat butter and evoo in sauce pan. Saute onion and garlic until lightly browned. Salt. Add chicken stock, tomatoes and Italian seasoning. Simmer approx 30 minutes.

I just wanted to say that I made this for lunch the other day and it was outstanding!! :yum :yum :yum So fresh tasting! And it helped that I had a mess load of tomatoes from the garden to use up :shifty

This sounds great! Ds loves tomatoes...it came a bit late for tomato season in these parts, but still, Romas are in season later! Thanks for the recipe. :-)
