Mmmmmmmmmmmmm. We went to the orchard today and picked the season's first apples. I'm making apple crisp this weekend. After two seasons here, and three recipes for apple crisp - here is the BEST I've tried:

6 large or 8 small apples, cored, peeled & sliced
2/3 cup flour
2/3 cup oats
1 tsp. pumpkin pie spice
1 tsp. baking powder
1/2 cup pure Canadian maple syrup (Trader Joe's is EXCELLENT!)
1 large egg
1/4 cup melted butter
mix flour through butter and pour over apples in 2 - 2 1/2 quart dish
bake at 325 degrees for 1 hour
Enjoy warm with vanilla ice cream that dh makes homemade! :P
