View Full Version : Why is my Mac & Cheese lumpy???

I can't figure it out. :scratch I put noodles, shredded cheddar cheese, milk, evap milk and butter into a crockpot, cook it for the correct time, and it's lumpy-like the cheese isn't melting right or something. Any ideas why?? Oh, and I've added an egg to it (the recipe called for it) and it didn't help at all. This has happened quite a few times already. It tastes good (well, dd doesn't like it :rolleyes-she only likes the kind in the blue box ;)) but it looks bad.

:shrug HELP! :grin Dh and the kids want it to be creamy, but no matter how much I stir, it doesn't get better. :giggle

It sounds like the cheese is separating and clumping - it happens when cheese gets too hot, over heat too long, or it's not blended well. You'll want to use a good quality cheese.

Try searching for America's Test Kitchen on pbs.org...they did a whole episode on the perfect mac and cheese, with the science of why it flops.
