View Full Version : best vegetarian "meat"balls ever!!

I had to share this. Ds liked these, but tended to gag on the walnuts as I did not grind them finely enough. I made half the recipe and it made about 15 meatballs, 1" each.

3/4 c ground walnuts
1 1/4 c crushed saltine crackers
4 eggs
3 1/2 c grated cheddar cheese (or mozz., or jack)
1 small onion, finely chopped
1 1/2 tsp sage
1/2 tsp salt
3 TB parsley flakes (dried)
2 cloves garlic, fiely chopped or pressed

sauce:
Combine in a saucepan and bring to a boil:
3/4 c apricot jam (I use the fruit sweetened type)
1/4 c lemon juice
1/4 c oil (I used safflower)
1/2 c ketchup
2 TB grated onion
2 TB oregano
2 TB brown sugar

Form meatball mixture into balls; place in baking dish, pour sauce over it, and bake at 350 for 30 minutes. (I did not have this piece of info and browned them in a skillet and poured the sauce over and covered it and simmered it for 15 min - so maybe you cover the baking dish? That I don't know)

But they were SO good!!! :yum :yum
