View Full Version : I need a good squash soup recipe

I have a good-sized butternut squash to use up and would like to make some soup with it. Does anyone have a great recipe to share?

Thanks! That sounds yummy and I will try it next time (soon :yes). I ended up just winging it the other day and it came out great. Here's what I did:

1 onion diced
4 medium potatoes diced
1 butternut squash cubed
garlic powder, onion powder, salt, pepper for seasoning
Butter or olive oil

Saute the onion with butter or oil, add potatoes and squash and saute for about 5 mins (don't ask me why, just thought it'd be good idea :giggle). Then I added water to cover. At this point you could add some veggie or chicken boullion, then simmered about 45 minutes till squash and potatoes were tender. Place everything in the blender and blend till smooth.

YUMMY!!!

I'm thinking I may add some canned white beans or some nutmeg next time, but this was great just as it was.

Fresh ginger makes a yummy flavor in butternut squash soup. I've made a number of good renditions. Butternut squash is pretty forgiving and makes a delicious soup, so it's no wonder yours turned out well!
