I looked at a few of those recipes and they look much more involved than mine! I love stir-fry so much! I bought some gf soy sauce (or tamari, I think?) and I just shake some into a pan with some olive oil, then add a bunch of yummy cut up veggies-green, red and/or yellow peppers, carrots, celery, green onions and then I add some cooked chicken (I bake a bunch of chicken one night and have baked chicken that night and stir fry the next, but you could just fry up the chicken in a skillet with olive oil). Just cook until you try one of the veggies and it tastes good! :shrug Sorry, I never time it, I just take out a carrot (they take the longest, generally) and if it tastes cooked, but not mushy, it's done! I add more olive oil and soy sauce as I go if I need to, you should be able to tell just by how much is in the bottom. Go easy on soy sauce at first though, you can always add more! This is really simple and so good. It takes awhile to cut the veggies, but you could use a frozen bag of stir-fry veggies too. That seems like a big explanation for such a simple recipe! :O HTH!
