It's nearly midnight and I should be in bed, but I had to brag. I got so much done today! Today I:
baked three loaves of zucchini bread (and we still have one left!)
made a triple batch of red beans and rice (some for dinner and two meals for the freezer)
canned 5 jars of salsa
canned 13 jars of squash pickles
cooked, mushed, and froze a pumpkin for later use (5 pints of pumpkin)
I have such a feeling of accomplishment! Which is good because I also have a stinging feeling in my fingers from hot pepper juice getting in all the tiny cuts I didn't know I had. And it has been hours since I chopped those peppers.
Most but not all of the dishes have been done. I am so tired but satisfied. :)
