Okay, ds is allergic to wheat/gluten, eggs, dairy. Does anyone have any bread recipes that I could give to him? TIA

Can I make it in a bread machine or does it have to be handmade? Do you think it would work for pizza dough also? Thank you.

I need all the recipes I can get! I have no idea what to eat and feed ds while taking all this stuff out of his diet... It's getting frustrating, I hardly have anything in the house that he can eat but fruits, veggies, and rice... I'm going to go grocery shopping tomorrow, but I don't even know what to buy!

French Bread/Pizza Mix from the Gluten Free Gourmet

Ingredients 6 cups mix 12 cups mix
rice flour 3.5 cups 7 cups
tapioca flour 2.5 cups 5 cups
xanthan gum 2 T 1/4 cup
unflavored gelatin (we don't use) 2 (7 gram) packets 4 (7 gram) packets
egg replacer 2 T 1/4 cup
sugar (white) 1/4 cup 1/2 cup

I make this in advance and store it for use. No need to refrigerate.

Seasoned Pizza Crust:

Dry Ingredients 1 crust 2 crusts
Pizza mix (above) 1.5 cups 3 cups
almond meal/soy protein powder 3 T 1/3 cup
Italian Pizza Season 3/4 t 1/5 t
Salt 1/2 t 1 t
Dry yeast granules 1.5 t 2.5 t (yes, it's the same)

Wet Ingredients
Egg replacer mixed eggs 2 4
Olive or vegetable oil 1.5 T 3 T
Vinegar 1/2 t 1 t
Warm water (more or less) 3/4 c 1.5 c

Preheat oven to 400degrees. Lightly greaste 1 (2) cookie sheets or round (solid bottom) pizza pan(s).
Blend te dry ingredients in a medium bowl. Set aside.
Place the wet ingredietns in the bowl of your heavy-duty mixer and blend. (reserve some of the water) Turn the mixer to low and add the flour mix. Add more water if needed to get a firm dough that can still be spread. Beat on high for 2.5 minutes. ***Note: I usually add 1/2 of the water and then add more until I get the right consistency.

Spoon the dough onto the prepared sheet(s) and spread in circle(s) about 12 inches in diameter, making sure the edges are raised to contain the sauce. Let rise about 10 minutes and then bake for 10 minutes while preparing y our toppings. Spread on your choice of pizza sauches, cheeses, and meats, etc. Bake again about 22-25 minutes.

Haha, I did a search because I needed a recipe and I've had the window open for, like, a week now. I figured I should just sub to it, so I had it when needed. LOL
