I have food intolerances... like this surprises me?? My doctor's sending me to a specialist and she said that this person probably isn't going to be able to help me and I'll have to travel further to get to the doctor I need... I don't care. I just want to feel better, and I'm glad we're figuring something out.

She didn't go into detail, but most likely it's Celiac's, which I've suspected all along.

Any tips on keeping a food journal? I'm thinking a small binder with loose leaf paper.

You might want to focus first on eliminating foods from your diet and go to a very basic diet for a few days. For example, chicken broth, easily digestible veggies and fruits, no nuts, no sugar, no wheat. Then start adding back foods one at a time. Write down what you eat, and your reaction to them. You might not have an immediate reaction, it might take a couple days if at all.
Just write what you eat, and how you feel after you eat.
