What do you cook with leftover chicken?

I roasted a whole chicken yesterday and have lots leftover.

I always cook soup the next day but am thinking that maybe I should do something different.

So what's your favourite thing to do with leftover chicken?

Chicken ceasar salad
Fajitas
Chicken patties
Chicken and rice
A weird thing that my kids like - mix the chicken in gravy and pour over mashed potatoes
Chicken quesadillas

More votes for chicken caesar salad and quesadillas. Also for sandwich wraps - chicken, lettuce, tomato, ranch dressing, olives, cheese, whatever... yummy! I love having leftover chicken bits!
Oh yeah - I also use it to "help out" frozen pizzas....and those soup mixes you can buy powdered in big bags, like tortilla soup or black bean soup.

Pulled chicken put into the crock pot with bbq sauce and left to simmer on low for a couple hours

chicken enchilada cassarole
