View Full Version : Cooking for a diverse group with dietary needs...

I need some ideas for a party we're having this weekend.

My mom is coming in town. She and her husband are low-carbers :rolleyes.
We are primarily veg, but occasionally eat free range/natural chicken and we do eat some shrimp.

My aunt and uncle (who we see once a year and she's a SPECTACULAR hostess/cook) are omni. Their daughter is SUPER picky (but I'm not exactly going to make her the standard hot dogs that she's used to - or chicken nuggets :sick)

So - what would you make?

I thought about making some kind of crock pot mexican shredded chicken, with tortillas and all the toppings (fresh guacamole that I make, homemade pico de gallo, etc). But, I don't know... I'm not confident about that as a spectacular meal for this group, kwim? But, my Mom and her husband LOOVE Mexican food (they had a mexican fiesta for their rehearsal dinner last summer) so that seems like a natural choice.

Any ideas on how to fancy this up a bit?

I might also make those edible salad shells.

Oh - plus I need a dessert idea.

I *did* end up going with Mexican, with all the toppings/components on the buffet.

It was a hit. But, unfortunately, two of my aunts and their families didn't make it. So, we ended up with TONS of leftovers.
