I always cook full meals Sunday-Wednesday evenings. Until about a year ago, all of those meals contained meat except for the occasional meatless lasagne or other pasta dish. But even then I was worried that dh wouldn't feel full enough. He never complained, though.
Well, this week we've only had meat once at it was chicken. I can't remember the last time I bought steak. We have ground beef about once every two weeks or so and I make a roast about once every four months.
So far this week we've had fish and steamed veggies with brown rice and it was wonderful! I think I could definitely give up all other meat as long as I could eat fish. We had a tofu stir fry on Monday. It was my first time making tofu and it was so yummy! Dh said it was great, but to make the cubes of tofu smaller so that guys at work would just think it was chicken and not hassle him! Lmbo
Last night a was chicken dish.
Tonight I'm making black bean burgers.
I know that dh won't completely stop eating meat. I won't stop eating fish or eggs, milk and cheese. Occasionally we both want red meat. For the most part, though, I'm planning on doing at least half of our meals as meatless. A year ago I never dreamed we'd actually eat a meatless meal twice a week or even more!!
