I roasted a chicken in our new dutch oven tonight. I just drizzled it with olive oil and sprinkled it with spices. There was a lot of liquid in the dutch oven when I was done. Can I dilute it and use it for broth?

I was alo wondering if I can use the bones and what is left of the carcass to make broth after I make a casserole with the leftovers chicken casserole tomorrow. it would pretty much just be bones.
What do you think? I have only made broth from raw chicken in the past.

i've never used the liquid after baking or cooking cuz of all the grease/oil. But i've made broth from bones and carcass always.
Just put all the bones and whatever meats still on it into the crockpot with water and cook on low overnight. strain out the bones in the morning and you should have some nice chicken soup stock

As far as using broth from having baked or cooked, just put it in the fridge overnight. The fat rises to the top and can be skimmed off. I will often do this even after parboiling chicken for soup. I like a less greasy stock.
