Preparing potatoes

I want to make a potato casserole in the crockpot on Sunday, but need to peel and dice the potatoes the night before. The last time I did this, they got all gray/brown looking. Is there something I can do so that doesn't happen? (they still tasted fine, just looked icky)

Slice them up and put them into a container of cold water and put that in the fridge
